Spoon desserts with jam

Last-minute guests, a sweet craving after dinner or a summer afternoon break: in all these cases, a spoon dessert is often the simplest and quickest solution. Just combine a creamy base, a fruity note and a crunchy element to get a complete dessert without complex preparations.

In this article we propose three spoon desserts with jam and crumble, all ready in less than 15 minutes and easy to customize according to tastes or different dietary needs. Let’s start with the base!

The crumble: crunchy base for all three desserts

Crumble is a simple preparation of Anglo-Saxon origin, generally composed of flour, butter and sugar. The name recalls its “crumbly” consistency: once baked, it becomes golden and crumbly, perfect for completing cooked fruit, creams, yogurt or spoon desserts with its crunchiness.

You can prepare it in advance and store it in a tightly closed jar to use when needed.

For a simple crumble base you need:

  • 120 g all-purpose flour
  • 70 g cold butter, cubed
  • 60 g granulated or brown sugar
  • 1 pinch of salt

Work the ingredients with your fingertips until you obtain a sandy and irregular mixture. Spread it on a baking tray lined with parchment paper and bake at 180°C for about 10 minutes, until golden. Alternatively, you can toast it in a non-stick pan for 5–6 minutes, stirring often.

For a butter-free version, also suitable for those looking for a vegan crumble, you can replace the butter with about 45 g of mild seed oil. The result will be slightly less rich, but still crumbly and pleasant, especially in combination with plant-based yogurt, plant-based cream or light creams.

  • 100 g di fresh cream or Greek yogurt
  • 2 tablespoons powdered sugar
  • 4 tablespoons organic extra berry jam

A quick and fresh version of tiramisu, designed to be assembled in glasses without long waits.

  • Work the mascarpone with the powdered sugar until you obtain a smooth cream, or buy it ready-made.
  • Add the lightly whipped cream or Greek yogurt, mixing gently.
  • Break the ladyfingers or dry biscuits and soak them quickly in milk or red berry juice.
  • Place the biscuits on the bottom of the glasses.
  • Add a layer of mascarpone cream, a tablespoon of berry jam and some crumble.

Recipe 3 – Warm crumble with jam: the pan spoon dessert

Ingredients

Procedure

This dessert focuses on the contrast between warm jam, crunchy crumble and a fresh or creamy base.

  • Heat the jam in a non-stick saucepan for 2–3 minutes. Add a tablespoon of water if you want a softer consistency.
  • In another pan, toast the raw crumble for a few minutes, stirring often. If you use already cooked crumble instead, heat it briefly to make it fragrant again.
  • Distribute the warm jam in heat-resistant cups or small glasses and add the crumble on the surface.
  • Complete with Greek yogurt, whipped cream or a scoop of vanilla ice cream.
  • Serve immediately, before the crumble loses its crunchiness.

Tips for Perfect Crumble and Spoon Desserts

To obtain a crumbly crumble, work the butter very cold and don’t compact the dough too much: the crumbs must remain irregular and light. If you have a few extra minutes, let the crumble rest in the refrigerator before baking.

In the layers of spoon desserts, it’s better not to overdo it with jam: the fruity note must be recognizable, but without covering yogurt, mascarpone, cream or ice cream.

Choose jams with a high percentage of fruit, capable of offering an authentic taste and pleasant consistency. And finally, serve the desserts immediately with warm or freshly toasted crumble: over time the crunchy part tends to absorb moisture and lose consistency.
