Ingredients

To prepare your yogurt cake with jam you’ll need:

  • 300 g of all-purpose flour
  • 3 eggs
  • 125 g of butter
  • 200 g of sugar
  • 125 g of plain yogurt or Greek yogurt
  • 1 sachet of baking powder
  • The grated zest of half a lemon
  • Jam

Concerning the choice of the jam, leave room for imagination: any kind will be fine. You can choose a citrus marmalade or an apricot jam, or a cherry or strawberry jam. Let your taste dictate the rules!

Preparation

  • Let’s start by preheating the static oven to 180°.
  • Then, in a bowl, work the softened butter and sugar with electric whips.
  • Once blended, add the eggs one at a time and keep working the dough until it becomes creamy.
  • Now add the yogurt and, little by little, the sifted flour and baking powder.
  • It’s time to perfume your dough: grate the zest of half a lemon, taking care not to include the white part of the skin.
  • Your dough is now ready to be placed in a greased and floured mold of about 22 cm in diameter.
  • Before baking – with the help of a spoon – pour small quantities of your favorite jam onto the surface of the mixture.
  • Bake at 180° in a static oven for about 35-40 minutes. Before removing the cake from the oven, we suggest you to do the toothpick test: what does it consist of? Just insert the toothpick into the cake to check if it is dry, an indicative sign of successful cooking!

Yogurt cake with jam in a vegan version

If you want to prepare a vegan version of the yogurt and jam cake, just eliminate butter and eggs, use soy yogurt and replace milk with a vegetable drink or seed oil, which will also help the cake to be even softer.

Preservation

The yogurt cake with jam can be stored in an airtight container or on a cakestand (in this case, remember to always cover it with a lid). At room temperature, the cake retains its characteristics for up to 3 days.
