For 4 people
1 kg beef shoulder; 1 clove of garlic; 1 onion; 1 sprig of rosemary; salt; ground pepper; 40g extra virgin olive oil; 50g brandy; 200g Lazzaris sliced apple mostarda.
Clean, taking out any cartilage or excessive fat cover from the beef shoulder, tie with a kitchen string and sear in a frying pan with a little of the extra virgin olive oil.
Season with the salt, pepper, rosemary, garlic and chopped onion and place in a hot oven at 140° for around 90 minutes.
Halfway through the cooking, soak with the brandy and, if necessary, add some of the broth.
Serve the roast with the strained cooking juices and the apple mostarda.
