Just forget the idea of biting a crunchy peach, because fall is almost here! Or maybe not. Well, prevent fall from arriving is certainly not in our power but we have a solution to bring along the sweet taste of peaches in winter. Preparing a homemade peach jam!

A good idea to preserve some exceeding peaches and taste them later in the winter days, together with butter and bread for a high energy breakfast!

How to prepare a homemade peach jam: the recipe

Just like every other jam, marmalade or preserve, peach jam requires a well-organized preparation process, there are lot of steps to follow carefully: you really don’t want to make a mistake during the preparation of this recipe, compromising its wonderful taste!

Choosing peaches

Let’s start from the basis: which peaches do we need to choose in order to obtain a homemade jam with an excellent taste and the right texture? You certainly know that peaches are not all the same, there are a lot of varieties: the velvety white peaches, the crunchy nectarines or the very peculiar Saturn peaches.

The right answer is: the ones you prefer! Well, there are no defined rules about the variety of peach to use: the fruit just need to be fresh, ripe and hard. It doesn’t matter the colour of the pulp or if they have fuzzy skin or not.

Since peaches will no longer be available on the market, the question arises: can we prepare peach jam with the peaches in syrup? Nothing is impossible, even if the original recipe requires freshly cut fruits. Experiments and new recipes are, however, more than welcome, just pay attention to the sugar! Peaches in syrup are another way to prepare your fruit preserve allowing you to taste peaches during the winter time. Sugar is required also in this recipe, and it will act like preservative for the fresh fruit.

Ingredients

Let’s see the complete list of the ingredients which are necessary to prepare a good peach jam: we will illustrate a very traditional preparation, but as usual, there are always lots of ways and recipes to follow.

Today’s recipe requires:

  • 1 kg of ripe and hard peaches, any type
  • 250 gr of sugar (brown sugar or regular sugar, according to taste)
  • The juice of a lemon.

Preparation

Let’s see step by step the whole process to prepare our peach jam:

  • First of all, wash the peaches, remove pits and skin. Cut the peaches into big cubes.
  • Transfer the cubes into a large pot, add sugar (250 gr): do not heat, that’s not the time yet!
  • Squeeze the lemon to obtain its juice, pour it into the pan with the other ingredients.
  • Cover the pan with a lid and let it soak for about 7 hours.
  • You can now start to cook! Place the pan on a heat and bring it to a boil, stirring now and then to prevent sticking. Cooking time from the boiling point will be: 40 minutes.
  • After this time pour the mixture in a fresh container in order to stop cooking your peach jam.
  • While still hot, pour immediately into sterile canning jars. Fill the jar to 1 cm from the top.

Preservation

If you have properly sterilized the jars and properly filled them, your jam will last up to 3 months. Now store the jars in a cool and dry place, to avoid any exposition to heat or light sources. When can you finally taste your peach jam? It should be better to wait 2 or 3 weeks from the preparation.

Remember that once you open the jar there will no longer be the vacuum allowing a long conservation of the product: this means that, once you open the jar, you have to preserve it in the fridge and eat it within 3 or 4 days.
