Easter is one of the most awaited festivities of the year, especially by children: colored eggs, chocolate bunnies and many spring flowers fill the festively decorated tables with joy and taste. Can you imagine anything better than waiting for Easter preparing some delicious biscuits filled with jam? We suggest you a recipe so easy that it can be made even with the help of the little ones.

Easter biscuits, colorful and fun to make, they are perfect for this day of celebration and suit everyone’s tastes. Thanks to their versatility, you can decorate them with any type of filling: custard, apricot jam, chestnut honey or chocolate.

What do you need to make Easter biscuits? A few simple ingredients, some Easter moulds and a lot of creativity: in a few minutes your biscuits will be ready to be shared with your family or given as gifts to your friends and relatives.

Ingredients

Here’s what you need to prepare 25 Easter biscuits:

  • 300 g of all-purpose flour
  • 100 g of sugar
  • 120 g of butter (or if you prefer 80 ml of sunflower seeds oil )
  • 1 egg + 1 yolk
  • Grated lemon or orange zest
  • A pinch of salt
  • Icing sugar
  • Your favourite jam
  • Moulds in the shape of eggs, rabbits, daisies or whatever you like

If you like it, you can also add 1 teaspoon of vanilla extract  while preparing the dough.

Preparation

  • In a bowl put the egg, the yolk, sugar, previously melted butter (or seed oil), grated lemon or orange zest and a pinch of salt and mix for a few minutes with a fork or whisk.
  • Add flour little by little, always mixing, until you obtain a firmer consistency.
  • It’s time to use your hands: transfer the mixture on a work surface and start kneading. Work it until you get a compact and smooth dough, cover it with a transparent film and let it rest in the refrigerator for about 30 minutes.
  • After 30 minutes, use a rolling pin and a bit of flour to roll out the mixture on the work surface and create a large sheet, about 4 mm
  • With your Easter moulds, cut some biscuits and place them on a pan, previously lined with baking paper.
  • In order to give a filling to your sweets, create other biscuits with the same shape – to be placed one on top of the other – and use smaller moulds to create a central hole on one of the two biscuits.
  • Place them all on the tray and bake them at 180° for about 12 minutes.
  • Once ready, use a teaspoon to spread your favorite jam on the biscuit without a hole; then close them with the other perforated half and sprinkle the biscuits with a bit of icing sugar.

Preservation

While they are still warm, you can serve your biscuits at the end of the Easter lunch or, why not, during an Easter Monday picnic, or as a snack with friends. You can also prepare them a few days in advance: if stored correctly in an airtight jar, these delicious biscuits can last up to 3 days.
