For 2 servings
1 duck breast; white wine; Lazzaris mostarda veneta to taste; salt, pepper, oil, butter as required
Salt and pepper the whole duck breasts and arrange them in a roasting tin. Sprinkle with extra virgin oil and a full spoonful of mostarda veneta.
Cook in the oven at 200° for 20 minutes and halfway through the cooking time pour a glass of white wine over them.
When cooked, cut the duck breasts into slices.
Arrange them on the plates and pour over the cooking juices that have been heated separately with a knob of butter until sufficiently thickened.
Serve accompanied by the mostarda.
