For 4 people
4 rabbit loins with ribs; 1 sprig of rosemary; 200ml brandy; salt; 400g chard; 80g extra virgin olive oil; 1 clove garlic poached; 40g Lazzaris spicy sweet orange sauce
Remove the ribs and clean them, season the loins with the salt, pepper, and rosemary, roll the crown and then tie up with kitchen twine.
Saute with olive oil, sprinkle with brandy and bake in the oven baking at 160 degrees for 10 mins.
Leave to rest for 5 minutes, remove the twine and serve with blanched and salted chard and poached garlic which are placed centrally in the rabbit crown.
Serve with the cooking juices and the Lazzaris sweet and spicy orange sauce.
